Bart's BBQ Chicken

While not technically barbecue, this recipe is the ultimate backyard grilled chicken we all know and love. Pair it with your favorite side and enjoy any night of the week, or impress everyone at the family cookout. Also excellent cold, or chopped with a little Cheddar cheese on top a baked potato.

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • olive oil
  • 2 quarts water
  • 1 cup salt
  • 3/4 cup brown sugar
  • 1/4 cup granulated onion
  • 1/4 cup granulated garlic
  • 2 cups Barts Signature BBQ Sauce

Preparation

  1. Combine water, salt, brown sugar, granulated onion, and granulated garlic to make a brine.
  2. Divide brine mixture and chicken into ziplock bags; refrigerate for at least 4 hours and up to 12 hours.
  3. Remove chicken from brine, pat dry, and discard brine; place on platter and allow to come to room temperature, about 1 hour.
  4. Coat chicken with olive oil and lightly season with salt.
  5. Preheat grill on medium setting and cook chicken for 5 minutes; turn and cook another 5 minutes.
  6. Lightly coat chicken with Bart’s Signature BBQ Sauce and cook 30 seconds to 1 minute, until sauce carmelizes and slightly chars, then flip. Repeat for 5 minutes then lightly coat chicken again and remove from heat.
  7. Let chicken rest for 5 minutes, then serve with additional sauce.
